We recently had the opportunity to taste David’s wines over a fun dinner with friends and immediately asked if he would be a Guest Winemaker. His tiny production Pinot Noirs are spectacular - all made from Pommard fruit from some of the Valley’s top vineyards.
In David’s words: “SchöneTal Cellars pays tribute to our family's German heritage and our journey here to the Willamette Valley. After my wife and I married we settled down in McMinnville, Oregon where we had four beautiful children. Our life has blossomed here, for many reasons, but the wholesome people, captivating landscapes and the undeniable culture of wine and food is what's kept us here for so many years.
My love for wine-making initially started when I began volunteering my time during harvest. The cold brisk mornings and the purple stains on my hands never seemed to last quite long enough, and in 2014 I managed to source some of the best Pinot Noir grapes in the northwest and SchöneTal Cellars finally came to life.
Our approach to wine-making is simple, fermentation occurs naturally in nature and that's exactly how we keep it in the cellar. We believe in allowing our grapes to express their true eloquence by naturally undergoing fermentation without any manipulation. Letting the grapes reveal their natural beauty and balance from the surrounding terroir is what makes our wines recognizable.”
